There are a myriad of cooking blogs out there on the inter web. It seems like many nights a week Amy is baking off some recipe from a blog, there's Salouise of It's Trivial fame, there's even a blog dedicated to all things bacon (yum). All these blogs show wonderful foods cooked to perfection. No one seems to want to highlight when things go terribly wrong. So I bring you Steve in the Kitchen.
Here's a shot of a Saturday morning waffle cook. We tried to substitute applesauce for eggs in the recipe. As you can see the substitution didn't stand up to the waffle iron. The batter did make good pancakes though.

I assure you, that's not the first waffle iron in history to look like that. :) I can't say that's happened to me in a while, but I assure you it has happened... more than twice.
Try it again, but don't ditch the eggs.
We were going for an allergy free waffle Autumn could enjoy with us, hence the no egg recipe.
Is she allergic to eggs? If she is, have you tried just the yoke? It is most likely that she's allergic to the whites.
